September is time when apples are ready to become in juice and then in wine. In this year I have more equipment and better chance to get good wine (drinkable). To make these I spent 1 day (3 evenings). This year I have played with sugar types (sucrose, glucose, fructose) and chokeberries

Exploded 10.09.2011 07:15 AM, Apples from home appletree |
There was explosion. Foam get in the aerator and blocked valve – pressure rises till BOOM. Lot of dirt and glass around
These are two types of yeast – one for white other for red wine
“Do to learn – sometimes it comes with lot of material waste”

Wow, I like your style. Just go for it. I have been making wine for years. May I suggest using a vat, covered with a cloth, for the first few days of fermentation then strain the juice into a demijohn with an airlock. By the way, your pictures are beautiful.
Thanks for advise! What is your experience of covering whole fermenter to avoid sunlight? Usually I dress fermenter in black T-shirt:)
